Make your milk money go a little farther still! You can also make a yummy fresh cheese and a beverage from your yogurt.
Directions:
Place 2-4 cups of yogurt in cheese cloth and hang it over a bowl until all the whey drains out. I do this in my bathtub by hanging the cheese on a broom handle, open air will make it more acidic, but you can hang it in the refrigerator if you like. The cheese can be eaten plain with sweet or savory breads. I like it on Boston brown bread or with some fresh thyme mixed in and drizzled with olive oil. I serve it with white crackers, a recipe from my Fannie Farmer cook book which I make with my fresh butter. “Is it worth making crackers? Yes, indeed,” writes Marion Cunningham. I wholeheartedly agree.
With the whey you can make this great Afghani beverage, Doh, which is really good with spicy food.
Ingredients:
1/2 yogurt whey
½ club soda
1 T. lemon juice
1t. dried or fresh mint
½ t. salt
Ice cubes
Combine ingredients, stir correct seasonings, salt and lemon to taste serve over ice
